Chocolate Pumpkin Black Bottom Cupcakes

I’m about to become your Hostess With The Mostess connection. ¬†Halloween dinner and you whip out the Chocolate Pumpkin Black Bottom Cupcakes.

Not that I came up with this killer and clever recipe, but if a culinary disaster like me can make these, we know they’re easy and amazing. ¬†Am I right?

CHOCOLATE-PUMPKIN BLACK BOTTOM MINI CUPCAKES

makes 24 minis

CUPCAKE

3/4 c. flour
1/2 c. sugar
2 Tbsp. cocoa powder
1/2 tsp. baking soda
1/2 c. water
1 Tbsp. oil
1/2 tsp. vinegar
1/2 tsp. vanilla
1/2 tsp ground cinnamon

Preheat oven to 350F degrees

Put all the ingredients in a mixing bowl & mix until incorporated. Set aside.

FILLING

8 oz. cream cheese, room temperature
3 Tbsp. pumpkin puree
1/3 c. sugar
1 egg
1/8 tsp. salt
1/8 tsp. nutmeg
1/8 tsp. ground cloves
1/4 tsp. ground cinnamon

Put all ingredients in a food processor. Mix until smooth.

Put liners in mini cupcake pans. Put about 1 tablespoon of chocolate cake mixture in each liner. Put a Tablespoon of pumpkin mixture on top of the chocolate. Bake for approx. 20 min. or until a tooth pick comes out clean. Cool.
